The history of the Bulgarian probiotic yogurt
No precise written evidence has been found about the origin of Bulgarian yogurt, but there are a few evidences that Bulgarian yogurt has been prepared and consumed thousands of years ago by the Thracians – the ancient inhabitants of the Bulgarian lands.
According to a National Geographic publication from 2008, in 2007 Richard Evershed from the Bristol University discovered over 2,200 ceramic vessels of 9000 years during archaeological excavations around the Black Sea on the border of the present-day Bulgaria. In the vessels are found residues of lactic acid products.
It is believed that the Thracians discovered this kind of probiotic yogurt that nowadays we call Bulgarian yogurt. According to this theory they have found that a more durable product (yogurt) is produced by adding fermented milk to fresh milk.
